Buckwheat has a number of useful qualities: it increases hemoglobin, quickly and permanently satisfies hunger, contains a number of vitamins and minerals. Groats will retain trace elements while observing the rules for its preparation. One of the common ones is to wash buckwheat before cooking.
Preparing buckwheat for cooking
In order for the cereal to become edible and pleasant to the taste, while remaining useful, it is prepared in one of the ways:
- Cook. In this case, the cereal becomes tender and soft.
- Fry, and then boil, then buckwheat will be more dense and crumbly.
- Steamed in hot water. As a result, the croup remains dense and crumbly.
- Leave for the night in kefir. In this form, the grains remain rough, saturation occurs quickly.
- Germinated in water to increase utility.
Regardless of the method of preparation, it is recommended to wash buckwheat. The cereal will be finally cleaned of dust and sand particles, small stones and other inedible inclusions.
Typically, the manufacturer warns about the need for washing, but sometimes there are no recommendations for preparation. This does not mean that the cereal is perfectly clean. It needs to be washed "by default".
Where does the buckwheat come from in buckwheat?
The quality of buckwheat is determined by GOST R 55290-2012. According to the standard, cereals are sold in the form of steamed or unpaired kernels (whole grains) and divided (chopped buckwheat kernels). The product is appreciated for the lack of pesticides, genetic modification, but the nuclei require additional purification.
According to established standards, the finished packaged cereals may contain:
- Chipped kernels, torment. These are small particles that do not pass through woven sieve No. 08 (8 holes per 1 cm2) Such impurities will not harm health, but with them the finished porridge will be viscous.
- Grains in the fruit shell. They remain tough for a long time and spoil the consistency of the dish.

- Litter of organic origin: buckwheat husks, particles of cereal stems and other closely growing plants.
- Poor quality kernels. This includes rotten, moldy seeds in the package.
All cereals, especially by weight, must be carefully examined. It may contain black grains of a weed plant - hop hop. They must be deleted manually.
Even cereals that are intended for baby food may contain the listed types of pollution. Exceptions are impurities of external and damaged grains.
In buckwheat of the highest grade, the admissible value of impurities is 0.3%; in cereals of 3 grades - 2 times more. To eliminate them, buckwheat must be thoroughly washed.
How to wash buckwheat?
To prevent organic and mineral litter in the porridge, you must:
- Go through the grain. Select uncleaned kernels, extraneous large inclusions. It is most convenient to visually inspect the product in a deep container of large diameter, distributing the cereal along the bottom.
- Start flushing by directing a stream of water into the container. When small particles come up, drain the water. Then rinse the buckwheat again. Repeat the process until the water is clear. So that no impurities remain at the bottom, stir the croup in smooth circular movements during the washing process.
- To exclude flour, buckwheat can be washed in a fine sieve.
Do not rub the kernels thoroughly, otherwise they will be damaged and the porridge will not be crumbly.
Do I need to wash buckwheat before frying?
Annealed buckwheat, which is brown, does not need to be fried. It is enough to rinse it and start cooking.Additional heat treatment is subjected to green kernels, which are considered the most useful.
When frying, the cereal acquires a pleasant aroma. If it is washed on the eve, the moisture level of buckwheat will increase, calcination will partially turn into cooking, after which the grains will become semi-finished. For this reason, housewives prefer to do without washing, and then the impurities remain in the porridge.
To cook green buckwheat correctly, you must:
- Fry the cereals in a dry pan for 4–5 minutes. Willingness is determined by the appearance of a golden hue.
- Sieve the cereal through a fine sieve.
- Rinse the product, pour clean water and cook until cooked.
Buckwheat can be fried for the future. Finished golden kernels are stored in a dry, dark place and washed immediately before cooking.
How to wash green buckwheat before germination?
The most useful is buckwheat with small sprouts. It contains 76 times more antioxidants than rice. "Live" croup increases hemoglobin, normalizes the nervous system. It should be prepared as follows:
- thoroughly rinse green buckwheat, eliminate floating particles;
- pour cereal with a 2-centimeter layer, pour clean water for 3 hours;
- place the groats in a sieve and rinse under a strong stream of water;
- pour into a container for germination, cover with several layers of wet gauze and cover with air cover;
- put buckwheat in a warm place (18-24 ° C) for 12-24 hours.
The appearance of small sprouts means that the cereal is ready to eat. It can be eaten as a side dish, added to a salad.
Regardless of the cooking method and the quality of the cereals, buckwheat needs to be washed. From this, it will become better, tastier, the risks of ingress of external impurities into the body will be completely eliminated.
